Took a bit of work to get a modern ThingsNetwork LoRaWAN integration going, finally with RadioLib, but it's a little beauty of a board. Don't forget that the USB-C port needs the little dongle, or you won't be going anywhere.
The connectors for the load cells are JST XH2.54 XH 2.54mm 4 Pin if you need to procure some.
Check out https://github.com/Bwooce/t-weigh-bee for some working code, sending raw sensor outputs but with some amount of configurability too.
